Chemical analysis of food products relating to the detection most common frauds is a complex task due complexity matrices and unknown nature processes. Moreover, are becoming more sophisticated, making development reliable, rapid, cost-effective new analytical methods for control even pressing. Over years, MALDI-TOF MS has demonstrated potential meet this need, also series undeniable intrinsic advantages including ease use, fast data collection, capability obtain valuable information from samples subjected simple pre-treatment procedures. These features have been conveniently exploited in field several matrices, milk dairy products, oils, fish seafood, meat, fruit, vegetables, few other categories. The present review provides comprehensive overview existing MALDI-based applications quality assessment adulterations.
